Chicken Nuggets

Living in a small town near Milan, Italy, it’s difficult to get food delivered at my house during the lockdown. Therefore, my mum and I decided to cook our own chicken nuggets.
Follow this simple, yet tasty recipe to surprise your family with a salty treat!

Ingredients for about 30 Nuggets - 500g (17.5oz) of chicken breasts - 5 slices of bread - 83ml (3oz) of milk - 83g (3oz) of cream cheese - zest of half a lemon - mint leaves as preferred - salt and pepper as needed Ingredients for the Breading - all-purpose flour as needed - breadcrumbs as needed - 2/3 eggs - salt as needed - seed oil (peanut oil is preferred)
Hot Tips: You can use any herb you like. Just be sure to pair the right flavours.

Start by cutting the chicken into strip and breaking up the sliced bread. Using a food processor, grind together chicken, bread, milk, cream cheese, lemon zest and mint leaves. Season with salt and pepper, then grind again until the mixture is uniform. Put aside for later.
Now it’s time to prepare the breading. In three different bowls divide the flour, the eggs and the breadcrumbs. Add a pinch of salt in the eggs and beat them using a pair of chopsticks.

With the help of a spoon, get a bit of the chicken mixture. Flour it and shape it however you like. Proceed by dipping it in the egg wash and then in the breadcrumbs. Put it on a tray. Repeat this step until you finish the chicken mixture.

In the meantime, heat up the oil in a large pan. Every now and then, check its temperature by dunking a wooden chopstick in. If it starts to bubble, the oil is ready.
Deep-fry 5-10 nuggets at a time (it depends on the dimension of the pan) for around 5 minutes. Turn them halfway through to be sure that both sides are cooked. The nuggets should turn golden.
Remove them from the oil with a slotted spoon and drain on the kitchen paper-lined tray. Season them with a pinch of salt and some chopped mint leaves.
Serve your chicken nuggets hot on a tray or plate.
